1-pound Crappie Fillets 1-cup INstant Patato Flakes 1/3-cup flour 2-eggs salt and pepper vegetible oil any other seasoning your heart disires
Directions:
Combine flour, salt and pepper, and any other ingrediants in medium bowl and mix.
In another bowl beat 2 eggs until smooth.
Pour patato flakes on a plate
Roll fillets into the dry flour seasoning, then dip into the egg and next roll on the dry patato flakes.
Warm the vegetable oil in a med frying pan and pan fry one side until its golden brown. When done flip and brown the other side.

I enjoy eatting rice with fish. With the dish I made 8 OZ. of Vigo Spanish yellow rice. I highly recommend this rice, It is great. You can find it in any grocery store, look in your spanish food section. Also if your like tabasco sauce it also goes great with these fillets.. Enjoy...
